Family Christmas Cake


Warning: This is a huge recipe and makes up to 10 lb of solid loaf-like cake. Good for gifts as well as your own enjoyment, or make a smaller batch. Or just eat it all.



1 1/2 cups sugar or honey

3 cups sifted flour

1tsp salt

2 cups eggs (or flax jell for vegitarian)

3 tsp vanilla

2 tsp almond flavoring

4 cups currants

2 cups soft chopped dates

3 cups dried cherries

2 cups raisins

2 cups dried pineapple

6 cups chopped walnuts

3 cups dried papaya


Mix first 6 ingredients to make batter. Work in the remaining ingredients gently, with your hands. Heap into four paper lined greased 7 inch loaf pans.


Bake at 300 F for 1 hour, covered lightly with aluminum foil and then continue baking uncovered for 10-20 more min. Remove from oven. Peel off paper as soon as cool enough to handle. Wrap in wax paper, then foil, and keep in the fridge. This keeps well in the fridge.(legend has it that it lasts all year, but I won't necessarily recommend that)
